recent blue apron dishes - part 1

hi guys! as mentioned previously, a lot's been going on, so i'll keep catching up as i can. but here's the next post that was easy to get together: a bunch of dinners that we chose in our blue apron subscription. i can't recall the rationale, but i think we had a coupon or something and ended up resubscribing. several of the meals mentioned below....i was too busy to even choose and they just kind of showed up on my doorstep. like so busy that i forgot to check the site to pause for the week or even cancel. oops. :) anyway, enjoy. as always, i have uploaded the recipes to my google drive for your reference! Seared Steaks with Lemon-Parmesan Kale & Roasted Potatoes
in hindsight, this steak is not all that pretty looking, now is it.... anyway, this was an ok meal. i mean, it's pretty basic.
Cherry-Glazed Chicken with Garlic Mashed Potatoes & Braised Collard Greens
if i remember correctly, this was super good! i need to get cherry preserves or something and make this again!
Seared Salmon & Lemon Labneh with Freekeh, Zucchini, & Dates
the freekeh-zukes-dates mix was really interesting! and the labneh dressing was really good!
Seared Steaks & Miso Butter with Marinated Bok Choy
i loved... LOVED. the miso butter on my steak. omg. i we had to buy more white miso for a dish mentioned in my part 2 post, but i'll likely make more miso butter in the future!

Tahini Chicken with Crispy Smashed Potatoes & Snow Pea-Tomato Salad
so apparently i forgot to photograph this one...sorry guys! if i remember right, i really liked the tahini sauce with the chicken...a lot. the smashed potatoes were ok, and i don't recall the salad much.
Honey-Ginger Pork Chops with Spicy Marinated Vegetables & Crispy Shallot
the honey ginger dressing was soo good! i have always been kind of indifferent about pork chops, because they're a bit drier, but this made it super good!
Marinated Vegetable & Soba Noodle Salad with Soft-Boiled Eggs & Peanuts
proportion-wise, this was wayyy too much food. either that or, me picking a vegetarian dish was a huge LOL. i was super surprised that blue apron sent the eggs for this dish in their own, cute cardboard package! anyway, i really enjoyed this dish on the first day, but it didn't really keep super well.
Chicken Bolognese with Grana Padano Cheese
i was pleasantly surprised by this! i like never use ground chicken, and this came out pretty good! i'm not a fan of this style of pasta, but if we remake it, i'll use something else.
Chrissy Teigen's Pork Bánh Mì with Quick Pickles & Roasted Broccoli
at home banh mi?! yes please! the only unfortunate thing about this dish was that the contents would continually fall out while trying to eat this, lol! otherwise, i really liked this!
